Healthy Food Friday: Mean Green Breakfast Smoothie

Great for: A cleansing, energizing breakfast.

January 1st, Super Bowl Monday,  March 18th, July 5th...I think you get the idea. To me, these mornings call for a detoxifying breakfast to combat whatever happened the night before, and it doesn't get much more nutritious than raw kale, carrots, peanut butter, and banana. I like the rice milk because it's much easier on my system than traditional dairy. This smoothie fills me up and leaves me feeling recharged and ready for the day. Pair it with a few scrambled eggs for the complete recovery experience. 

INGREDIENTS

  • 1 ripe banana
  • 1 medium carrot, cut into inch pieces
  • 3/4 cup - 1 cup rice milk
  • 2 tablespoons natural peanut butter
  • 2-3 cups frozen kale

DIRECTIONS

  1. Add banana, carrot pieces, and 3/4 cup rice milk into a blender and blend until smooth.
  2. Drop in the peanut butter, then add the kale and blend until you reach the desired texture, using a little extra rice milk to loosen the mixture if needed.

Cook's note: By frozen kale, I mean a bag of fresh, chopped kale that I pop into the freezer as soon as I get home from the grocery store.
